White Halo-Halo: When Less is More

Photography: Kitchen Angel

Tucked away on a bustling street, in an unassuming chain restaurant, this halo halo was introduced to me.  I’ve only known the usual Halo-Halo, which is a cornucopia of ingredients layered in a summer rainbow parfait of red kaong, green gelatins, yellow jackfruit, crushed ice, white evaporated milk, bright purple ice cream (and sometimes caramelized brown flan!). This Kapampangan Halo-Halo was quite a surprise and a vision in white, yellow and 50 Shades of Brown. With traditional Halo-Halo, I’m a bit overwhelmed, and I really only like the sweetened milk, pinipig (toasted rice) and the beans. This Halo-Halo Puti was simple and refreshing. I loved it and hope you get to try it in the PH or make it wherever you are.

Hungry Huy Recipe captures the flavors, texture and vision.

“While I’ve had plenty of halo-halo throughout the years, I reaaallly loved Razon’s (a chain style restaurant in the Philippines) style halo-halo because of the flavor profile and simplicity of the basic five ingredients: coconut strips (macapuno), caramelized banana sauce, shaved ice, evaporated milk, and leche flan (Filipino style flan). I like to amp it up a notch and also add ice cream because why not?” - Excerpt from Hungry Huy

“You won’t find the usual suspects in Razon’s halo-halo — no scoops of ube ice cream, no colorful beans and jellies. This Kapampangan version keeps it simple with only three things: macapuno, caramelized bananas, and leche flan. Then there’s the shaved ice, ground finely like snow, soaking in a rich, creamy milk. That creamy milk base is what makes Razon’s so special.”

Masagana

For 30+ years Masagana in New Jersey has been serving Filipino food out of their karinderia and ingredients from their shop. I love their honest, home style food which uses good ingredients and a light touch. If you have a special occasion and would like to order a whole lechon or Lechonita, you're in good hands.
